ABSTRACT: Novel interdigitals sensors have been fabricated to detect the presence of Lipopolysaccrides (LPS) which is related to endotoxin contamination in food. Three differ­ ent configurations of electrode structure with different substrates and fabrication methods have been developed and analysed. The impedance spectroscopy (IS) has been used to analyse the sensors’ characteristic as well as to analyse the interaction between sensors with different LPS solutions. Pure LPS products o f Ol 11:B4 and LPS rough strain have been used in the experiments and it was found that the impedance spectroscopy of the developed sensors able to show good experimental results. This paper reports the successful development of novel planar interdigital sensors and the impedance spectroscopy measurement for different LPS.
