ABSTRACT

The electronic nose instrumentation has been used to measure both simple and complex odours in many fields of application. Many researchers have reported on the use of an electronic nose to measure simple odours that arise from a single chemical compound. Among the fields, which can receive more benefits from this class of instruments, food analysis is the most important to satisfy the market demand. It is known that a fast and deep food inspection may be important for a better quality of life and production process quality control. The electronic nose used in food industry is only one example of complex odour discrimination analysis and has been widely reported and well approved. Some applications include the identification of different grades of wheat, types of cheese, grades of meat and the flavours of many kinds of drinks and beverages. [2]

For this reasons "Electronic Nose" must be trained with examples of odours to be recognised, so that the pattern recognition agent learns how to distinguish different aromatic patterns.
