ABSTRACT

I. INTRODUCTION Every living system on earth has universal structures organized as molecular assemblies in aqueous medium, and amphiphilic molecules play a crucial role in sustaining such organized structures. Many of the various types of naturally occurring amphiphilic molecules, that is, natural surfactants, have amino acidbased structures. Most of these natural surfactants have A-acylamino acids structures, with fatty acid residue as a hydrophobic moiety connected to the amino group of the amino acid.
