ABSTRACT
Canning should not be done in microwave ovens because heating the product in sealed cans or glass jars could result in uneven heating of the product. Underpro cessing of the product would result, and any spores of C. botulinum present could possibly survive, especially in low acid foods. Spoilage organisms in acid foods could also survive.
