ABSTRACT

Nutrition is one of the most obvious and important components of the wellness approach to good health. Food provides nutrients that supply energy, construction materials, blueprints, and machinery to maintain the body and to make it run. As a remarkably designed machine, the body continually rebuilds itself, every cell in the body being in a dynamic and ever-changing flux; e.g., the cells making up the lining of small intestine are lost by extrusion into the intestine at a rate of 20 to 50 million cells per minute. The food that we eat supplies all the necessary chemicals to replace these cells at the same rate. The old saying that “we are what we eat” implies that all the essential chemicals and materials of the human body are provided by the food consumed.
