ABSTRACT

The term cancer strikes great fear in the general population. For scientists, cancer refers to a dis­ ease process, carcinogenesis (1), which is thought to develop in more than one reversible and irre­ versible steps. These are characterized by the appearance of new types of cells, representing stages in the transformation from normal to malignant cells. Some of the reversible and irre­ versible steps may be influenced by dietary factors that can limit or protect the multistep devel­ opmental process of clinical cancer (2).
