ABSTRACT
The term cancer strikes great fear in the general population. For scientists, cancer refers to a dis ease process, carcinogenesis (1), which is thought to develop in more than one reversible and irre versible steps. These are characterized by the appearance of new types of cells, representing stages in the transformation from normal to malignant cells. Some of the reversible and irre versible steps may be influenced by dietary factors that can limit or protect the multistep devel opmental process of clinical cancer (2).
