ABSTRACT

Rice is steamed and usually made with extra water to keep it soft. It is also popular ground and used in noodle or rice paper format, made into pancakes, and used as rice flour in a myriad of other ways. Spring rolls called ch a g io are popular at meals and also a favorite snackfood, as are fruits of all varieties. Oranges, apples, coconuts, carambola or star fruit, bananas, mangoes, pineap­ ples, pomelos, custard apples, and watermelons are but a few of them. Vegeta­ bles are used in varying amounts, and radishes, carrots, cucumber, zucchini, and eggplants are popular. Recently, there has been considerable use of as­ paragus and white potatoes. The Vietnamese eat a good many salads, with veg­ etables raw or minimally cooked, sometimes with a hint of meat or seafood for flavor. Because of the recent French influence, the peoples of this Asian country have developed a love of cafe au lait, yoghurt, ice cream, milk con­ sumed as a few tablespoons condensed milk mixed with water, and a love of pate, more frequently made with fish rather than meat.
