ABSTRACT

IN Chapter 3, various types of noodles have been described. In this chapter other popular wheaten foods, including breads, cakes, cookies, pastries, and dumplings, will be discussed. Wheaten foods have had a very important role in the diet and culture of Asian countries since very early times. Today, steamed bread and noodles are very common foods in China and the East and Southeast Asian regions. Over 1.3 billion people consume steamed bread and buns regu­ larly. Dumplings are also a traditional food and are becoming more popular as the general living standard improves. The commercial production of frozen steamed bread, buns, and dumplings, creating more convenience for con­ sumers, has raised their popularity even further.
