ABSTRACT

Frozen dumplings have been available since the mid-1970s in East Asia. In 1988 Beijing Eastern Food Company produced frozen dumplings for the first time in China and immediately had a major success. Since then, more and more frozen food factories have been established, and the dumpling machine manu­ factured in Harbin City in Heilongjiang Province has predominantly been used throughout China. The frozen Chinese dumplings, wonton, saomai, and so on are all available in city supermarkets in China. The price of the frozen dumplings is more acceptable than previously, and the quality of the frozen products has improved. However, there are still some quality problems from two main sources: processing technology and the quality of the flour used.
