ABSTRACT

In Japan, these are trials to use the flour in the production of tempura mix, manju (steamed or baked bun), candy, and miso. Biscuits and wafers made from amaranth flour were put on the market by a large biscuit company and were well received by some consumers. In China, it is used as a material to produce local liquor and vinegar. The color of bran is utilized to give color to soy sauce, and the flower of amaranth is also used to produce honey in China.
