ABSTRACT

Fruits constitute an important part of the human diet. It is one of the main food resources that humans need to ingest daily. Most fruits are consumed fresh with little preparation. Approximately half are graded, prepared, processed, packaged, and transported for year-round consumption. Types of fruit products can vary from country to country or even place to place in the same country because of environmental differences. Some fruit products are consumed directly as foods, while some are used as ingredients in confec­ tionery, bakery, and diet foods. Some are also used in pharmaceutical products.
