ABSTRACT
Currently, the machines used for manufacturing rice crackers are almost all continuous. With the same machines, one can manufacture both glutinous and nonglutinous rice crackers. It takes 3-4 h for the continuous process, while the conventional method takes 3-4 days. Success in rice cake processing depends on efficient operation of the equipment and procedures.
