ABSTRACT

Steamed bread has been a subject of interest to several rice utilization re­ searchers (Tsen et al., 1982; Rubenthaler et al., 1990; Huang et al., 1995; Wen et al., 1996; Yue and Rayas-Duarte, 1997). They made significant contribu­ tions to the knowledge of making steamed rice bread. More detailed informa­ tion on steamed bread is found in Chapter 4 of this book.
