ABSTRACT

From 1960 to 1990, there is a trend of dietary changes. Most countries show a decrease in cereal consumption. Most affluent countries showed an increase in meat, vegetable, and fruit consumption. The consumption of milk and dairy products has increased in a few countries. In comparison, cereals contribute less than 25% of total energy in Europe and North America, and meat and other animal products may account for 25% or more of the total energy intake in the United States, Canada, Australia, and New Zealand (FAO/WHO, 1991).
