ABSTRACT
The process of starch extraction from corn comprises steeping, degermina tion, grinding by friction, washing, shifting, centrifuging, filtering and drying. Dent com is most commonly used for starch extraction, but the use of waxy or high amylose corn is increasing because of its high extraction rate and peculiar quality.
