This group of Chinese food encompasses a wide range of salted meats cured with or without added nitrite or nitrate. The main products in this group of meats are salted meats, winterized meats (semidry), meats pickled in soy sauce, ham, and bacon. Pig head, pig tail, pig feet, corned beef, and salted lamb are some of the most popular salted products.
