ABSTRACT

As the first prize winner in the Panama International Merchandise Exhibi­ tion held in 1915, Jinhua ham has long been recognized as a premium meat product. Today, joining several other meat products, Jinhua ham is routinely exported to meet the world’s demand. It is sold in South Asia, Japan, Australia, and Europe. Recently, several countries (e.g., Australia and Germany) have re­ portedly experimented with some modified manufacturing processes to make Jinhua ham. Despite the similarity in product characteristics, it is difficult to reproduce all the flavor and texture attributes of Jinhua ham that is manufac­ tured using the traditional slow fermenting and aging processes.
