ABSTRACT
Fruit jelly is one of the oldest and most popular fruit by-products. The jelly is beautifully bright and transparent. A good jelly gelatinizes on cooling and is firm enough to hold the shape of the container when turned out of the con tainer. It must be soft enough to quiver upon shaking but must not flow. It must be clear and transparent and should retain the flavor of the fruits.
