ABSTRACT
Hi g h hydrostatic pressure (HHP) is a promising technology that could be used to replace or complement heat-induced surimi gels. The use of HHP changes important textural properties, such as hardness and cohesiveness. Therefore, careful selection of processing time, temperature, and pressure becomes relevant for optimizing surimi-based product acceptability.
