ABSTRACT

IN addition to the polysaccharide gums described in the previous chapters, there are many other agriculture resources that contain significant amounts of water-soluble polysaccharides and have a great potential as stabilizers and thickening and/or gelling agents. However, there are only limited amounts of in­ formation available in the literature regarding these materials. This chapter re­ views four polysaccharide gums that, in the author’s opinion, have great poten­ tial of becoming commercial gums.
