ABSTRACT
Throughout the last few decades there has been an increasing demand for fresh or minimally processed foods free of additives and preservatives. This trend has promoted the development of technologies to provide a reasonable shelf-life attending to the above requirements. Modified atmosphere packaging (MAP) is one of these technologies with an increasing presence in the market.
