ABSTRACT

Introduction Is the oxidation of low-density lipoprotein (LDL) the cause of cardiovascular disease (CVD)? In vitro studies and in vivo animal studies suggest that it is. Controlled clinical trials in humans suggest that it possibly is not (Table 8.1). The debate will continue until absolute proof is found, or not. Perhaps supplementing with anti­ oxidants after years of poor diet is too late and that only life-long intake of foods rich in natural antioxidants as in The Mediterranean Diet’ is sufficient to prevent CHD, time will tell. The articles presented in this chapter indicate how complicated the current situation is and begins with a defence of the ‘oxidation hypothesis’ by its originators.
