I.INTRODUCTION Bothtotalandpercapitaconsumptionofricehaveincreasedsubstantially overthelast10yearsintheUnitedStates.Totaldomesticconsumptionrose from26.9millionhundredweight(cwt)in1978/79toalmost47.5million cwtin1988/89,a77%increase,basedonUSDA'sbiannualmilledrice distributionsurveys,DepartmentofTreasurydataforbrewers'use,and ForeignAgriculturalServicedataonimports.Percapitauserose60%from about12poundsto19.2pounds.
