Free acetaldehyde combines with two molecules of ethanol to form acetals in WlOe.

Experiments by Delfini et al. (l995d) have shown that the formation of acetaJdehyde by the yeast is influenced by many factors, such as pH (Fig. 83c), degree of aerobiosis (Fig. 84), clarifiers (Fig. 85a) and the size of the yeast inoculum (Fig. 85b). In addition to inoculum size, the phase of growth of the starter culture (logarithmic or stationary) and strain (higher or lower producer of acetaldehyde), are also critical and this influence should be investigated more thoroughly. Furthermore, in some strains, the production of acetaJdehyde correlates inversely with the formation of acetic acid (Fig. 83a, b).
