ABSTRACT
An emulsion is a colloidal dispersion of two immiscible liquids, such as oil and water. There are two types of emulsions, according to the distribution of the water and oil droplets:
• Oil-in-water emulsions (O/W): Water is the dispersion medium, and the oil droplets are the dispersed phase. Example: mayonnaise.
