ABSTRACT

This chapter presents the Swedish Salmonella control programme in poultry with a view to highlight insights that could be helpful for poultry Salmonella control programmes in other countries. During the past 60 years the Salmonella control programme in poultry meat production has evolved, and the programme has been frequently reviewed and revised in light of new evidence and changed market conditions. Some of these elements will be outlined in this chapter, and hopefully some of the lessons learnt might be useful when designing or revising Salmonella control programmes along the poultry meat food chain in other countries. Perhaps it is good to keep in mind that any food business operator, operating all along the food chain, is responsible for the safety of the food, including Salmonella freedom.
