ABSTRACT

Consumers have defined expectations on the quality of their food. This especially holds for meat as meat is assumed to be a high-quality product. In contrast to production of vegetables, consumers have also specific expectations on how meat is produced, equating their expectations with quality features. In general, poultry meat is produced in large houses under very intensive conditions, raising animal welfare concerns in consumers. Therefore, the attitude of the consumer has to be considered as a new quality attribute of poultry meat.
