ABSTRACT

The fruits considered in this chapter are not related botanically, but all are native to the temperate zones (although some cultivars thrive in subtropical regions). Strawberries and raspberries are known as 'soft fruits'; they are not true berries. Blueberries, cranberries, currants and gooseberries are berries

which grow on bushes, while grapes and kiwifruits are types of berry which grow on vines. With the exception of cranberries, the optimal storage temperature for all these fruits is 0° to 1°C, but they differ substantially in potential storage life.
