ABSTRACT
Like other amphiphiles, membrane phospholipids self-assemble in aqueous
solution into aggregates, provided their density exceeds a certain critical
micelle concentration (cmc), which depends on their chemical structure and
the ions present [1-4]. In the case of phospholipids, the assembly takes the
form of bilayers, which aggregate into multilamellar structures (Fig. 11.1).
