ABSTRACT
Most proteins function in an aqueous environment. Two types of water
molecules exist in a protein-water system: bulk water and hydration water. On
the surface of the protein, water molecules interact strongly with the protein;
this interaction is termed “protein hydration” [1]. Protein hydration affects
the structural lexibility of a protein, as well as its biological functions [2, 3].
