During last 30 years, significant numbers of oligosaccharides have appeared in the Japanese market. Table 18.1 lists major oligosaccharides having more than 100 tons/year production along with their prices. The total production of these oligosaccharides amounts to 64,800 tons/year with their total sales of 13 million dollars. They find application in food or food additives claiming health beneficial functions.
