ABSTRACT

Food industries that process pomegranate products such as juices, jams, and wines generate large amounts of daily peel (near 50%) producing high contamination due to the incorrect treatment they receive, without giving them a use and only treat them as garbage; among them is the pomegranate peel, a material rich in phenolic compounds with a huge application. This review will discuss about pomegranate (Punica granatum L.), its uses, commercial, and medical applications and the potential of this plant at the scientific level, as well as pomegranate peel and the compounds present in it with a seen in the problems related to the extraction and obtaining of these phytochemicals, taking as an alternative the solid-state culture (SSC) technique.
