ABSTRACT

Capsicum, cayenne pepper or chili pepper, is also referred to merely as red pepper. It consists of the dried ripe fruit of Capsicum frutescens L., Capsicum annuum L., or a large number of hybrids or varieties of these species of the family Solanaceae. For centuries, these plants have been highly valued as spices, and the extensive cultivation carried out over that period of time has resulted in peppers widely differing from one another in size, shape, and pungency. The labeling of commercial samples is really meaningful only if the variety is specifically designated.
