ABSTRACT

L. lactis phages and similarly Lactobacillus helveticus

phages were found to exhibit very high thermal resistance

whereas phages of Streptococcus thermophilus were less

heat resistant. Lactobacillus delbrueckii and Lactobacillus

casei/paracasei phages have proved rather heat sensi-

tive.[4-8] In this report we therefore focus on L. lactis

phages. Three predominant phage species account for

98% of all known L. lactis phages.[9] These species and

their morphotypes are depicted in Table 1.
