ABSTRACT

Replacing fish oil (FO) with vegetable oil (VO) in aquaculture diets alters the dietary fatty acid composition as well as other lipid-soluble components present in FO and VO. Changes in dietary fatty acids may directly influence the fish lipid metabolism and the tissue lipid composition, as well as factors which may influence tissue fatty acid composition such as digestibility, fatty acid catabolism, lipid transport and uptake, lipogenesis, fatty acid desaturation and elongation, and eicosanoid synthesis. These are reviewed in this chapter. Generally, changing dietary fatty acid composition by replacing FO with alternative oils affects several aspects of the fish lipid
