ABSTRACT

Chapter 9 discusses the gustatory, olfactory, and interoceptive systems, including key terminology such as oral input, retronasal olfaction, and vagus nerve. It then reflects on common classroom activities impacted by the gustatory, olfactory, and interoceptive systems such as using the bathroom, eating snacks and lunch, participating in art class, and participating in PE class. Finally, this chapter delineates signs of gustatory, olfactory, and interoceptive understimulation or overstimulation; and poor gustatory, olfactory and interoceptive discrimination. It provides concrete, practical strategies for each respective sensory need that can be used in the school environment. Included in this chapter are diagrams, interactive scenarios, and an activity to simulate poor oral discrimination.
