ABSTRACT
The controls commonly used to try and ensure the production of safe food can be conveniently grouped into two sections for consideration. One grouping would comprise the management systems used by food producers to ensure the safety of their food. The other would include the control systems used by enforcement and other agencies to check that the food producers have been successful in producing safe food.
