ABSTRACT

Humans and microorganisms both have been closely associated through evolution process in one or other way to each other and have deeply impacted each other. With their domestication to form fermented food products, microbes are now also an indispensible part of the human food chain. It is a remarkable serendipity that dierent civilizations and societies in the dierent phases of development have shared a common tradition of consuming fermented products. ese fermented products thus represent an important aspect of our sociocultural and scientic history.
