ABSTRACT

Milk is a complete food for all ages of individuals as it contains ideal balanced nutrients for growth and development. Varieties of milk are marketed under dierent brand names like cow’s milk, sheep milk, camel’s milk, and milk obtained from plant sources such as almond, oat, soya, and rice milk (Zivkovic and Barile 2011). e market value of all these kinds of milk is due to their benecial role in daily lifestyle of humans. Moreover, products derived from milk have abundant source of proteins and vitamins and are generally prepared from low-fat milk. Cheese and yogurt, food products prepared from milk, also contain same benecial nutrients as present in milk. ey are also very rich source of calcium, which is an important mineral and helps to build strong muscles, bones, and teeth (Abrams 2013). For the growth of children, calcium is utmost necessary, which helps to grow strong bones and teeth. Various kinds of milk food products that have high nutritional value are available in the market in a variety of forms like clotted cream, ker, powdered milk, whole-milk products, buttermilk products, skim milk, whey products, ice cream, high milk fat and nutritional products, khoa (milk tofu), infant formula, ghee (butter), and evaporated and baked milk.
