ABSTRACT

In recent years, consumer’s demand for products with functional ingredients has increased, and this situation has underlined the need to guarantee the safety, traceability, authenticity, and health benets of such products. According to recent knowledge, foods derived from marine seem to be by far the greatest sources of bioactive protein. Hence, commercially available marine food protein products have also prompted newer challenges. Marine bioactive food proteins have been isolated from sh, algae, mollusk, crustacean, and marine by-products including substandard muscles, viscera, skins, trimmings, and shellsh. Bioactive proteins derived from marine organisms as well as from marine sh processing by-products have greater potential for the development of functional foods for new commercial trends by industries. Marine food proteins have long been recognized for their nutritional and functional properties (Larsen et al. 2011). They have been used as essential raw materials in most industries. They have potential in novel commercial trends, as they are widely commercialized in food, beverage, pharmaceutical, and cosmetic industries, in addition to other elds such as medicine, biotechnology, photography,

textiles, leather, and electronic. The industrialists are eager to embrace a novel product if it can deliver what consumers want and, at the same time, industry needs to balance its involvement against the perceived market potential for a new trend. This chapter presents an overview of the current status, future industrial perspectives, and commercial trends of marine bioactive food proteins.
