ABSTRACT

Similar to many other fruits, citrus production areas around the world are typically distant from their overseas markets, a fact that produces an important delay between harvesting time and the arrival of the fruit at the point of consumptions. Ÿis delay usually has negative e•ects on fruit quality because of all the modi¤cations brought about by the uncontrolled ripening process. Ÿis problem also a•ects fruits devoted to domestic consumption, which have to be stored for long times in years with overproduction.
