Fats, Genes and Food: Using Lipids as a Tool for Science Education and Public Outreach
In this chapter, I will discuss the use of lipid science as both an educational tool for school and university students, and as a useful method to engage the general public in debates on such key topics as healthy foods, the obesity epidemic and genetic engineering. I will examine a series of topics and case studies based on personal experience over more than 30 years as an educator and researcher. During this time,
lipids in one guise or another have frequently become important themes of public interest and controversy.
