ABSTRACT

Shaundra was concerned about excess water use by food processors and about water pollution. She decided to study food engineering to be able to help lower water use and reduce water pollution by the food industry. She soon learned that she would need to become familiar with many concepts such as mass and energy balance, biological oxygen demand, and the carbon-to-nitrogen ratio. The more she learned, the more she realized that there are many things that can be done to better conserve our resources, but food safety is always the biggest concern of a food engineer.
