ABSTRACT
There are signicant differences in the processing of citrus fruits as compared to pomaceous fruits, stone fruits, and small fruits. The citrus juice extraction is aimed to obtain the best possible separation of juice, peel, and peel oil. Citrus oils are of great importance in the avor industries. The peel oils are the principal factors affecting the juice taste.
