ABSTRACT

Farm practices greatly influence productivity, and the farm is the starting point for the control of contamination of the laying facility, the laying flocks, and eggs. In 1990, when Salmonella outbreaks were affecting the European and American egg markets, the Canadian Egg Marketing Agency in conjunction with Agriculture and Agri-Food Canada developed a voluntary program of recommended codes of farm management practices (1), which are summarized in the subsections that follow. The program is based on an HACPP approach for controlling risks in food pro­ duction.
