Antiradical Properties of Essential Oils from Oregano, Thyme, and Savory

In recent years, the interest in the study of properties of essential oils (EOs) of aromatic plants, which content various natural bioactive compounds, has increased significantly, as problems related to the safety of many synthetic chemicals used in various fields of human activity became urgent [1, 2]. For example, studies have shown that many EOs are antioxidants, the effectiveness of which is equal to that of synthetic antioxidants, while they and their metabolic products are safe for health. All these qualities greatly expand the boundaries of the study and application of natural EOs [3-7].
