ABSTRACT

Data on the dietary fiber intake of the Chinese population are meager. The intakes of the dietary fiber components were calculated by the fiber contents of mixed diet per person. The estimation of average dietary fiber intake for China was derived as a weighted average of values for all provinces or autonomous regions and municipalities in China. The dietary fiber intake estimate is usually strongly influenced by the data source. Residual cell wall protein was measured to allow an estimate of soluble fiber since the total dietary fiber was corrected for residual nitrogen. Dietary fiber intake values for the survey population were calculated based on neutral detergent fiber content. Foods samples representative of cereals and vegetables consumed in the counties were collected and analyzed by direct laboratory methods to estimate contents of dietary fiber and its components.
