ABSTRACT

Food packaging plays an essential role in keeping food quality and reducing preservatives used in food through the supply chain to the consumer. The packaging protects food against chemical and physical damage or contamination by micro-organisms, air, moisture, and toxins as well as providing information required for consumers such as product features, nutritional contents, and ingredient information. The novel seafood packaging techniques are a helpful way to extend shelf life and preserve quality of fish and meet consumer, administration, and industrial requirements throughout the food supply chain. In this chapter, up-to-date information and recent discoveries about packaging techniques including vacuum, modified atmosphere, active, and intelligent packaging are described as well as their compounds and safety concerns for consumers.
