ABSTRACT

Biocatalysis gives impetus to the field by the utilization of enzymes which are highly specific in their mode of action, targeting a particular area in the molecule and transforming it stereo- or regioselectively into structurally diverse products. The later technique is known as “whole-cell biotransformation.” Both, whole-cell biotransformation and pure enzyme technologies have been effectively employed for the structural modification of organic molecules. Antioxidants are chemical compounds which have the ability to scavenge free radicals inside the body. Single-electron species usually react through a radical mechanism. Phenols are good sources of hydrogen radical for scavenging reactive free radicals and in turn producing less reactive, resonance stabilized radicals, which are killed in the termination step. The sequence of steps mainly depends upon the ionization energies of the radical and the molecule, and the bond dissociation energies of the O–H bond in the molecule.
