ABSTRACT

Foods of animal origin are essential in human nutrition. These include meat, milk, eggs, hides, and feathers. Animal-derived foods contain all essential macro and micronutrients with high bioavailability. They are considered the best source of high quality protein along with essential vitamins and minerals. Animal-sourced foods are divided into two main categories, namely meat and meat products and milk and milk products. Animal foods are consumed in large quantities in the developed world while consumption in developing countries is also increasing. Various methods are employed for processing of animal foods. A diverse range of products made by processed milk and meat can be seen on the shelf that have eased the life of consumers. With increasing consumption of animal foods, risk of many degenerative and communicable diseases have also been increased. Increased risk is mainly due to higher fat contents of animal foods, variable processing techniques, improper handling and storage conditions, and low quality of animal feeds.
